Black Bean, Corn and Bell Pepper Salad with a Creamy Dressing

Ingredients

  • ​½ cup of Hood Sour Cream
  • 2 tablespoons olive oil 
  • 1/2 teaspoon chipotle chili powder 
  • 1 teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • 2 tablespoons lime juice
  • 1 15 ounce can of black beans, drained and rinsed
  • 2 cups of frozen corn, thawed
  • ¼ cup red onion, minced 
  • 1 cup red bell pepper, small dice
  • 2 tablespoons cilantro, minced

Directions

  1. ​Combine sour cream, olive oil, chili powder, garlic powder, lime juice, ¾ teaspoon salt and a pinch of black pepper in a large bowl. Whisk to combine.
  2. Add in beans, corn, red onion, bell pepper and the cilantro, gently toss to combine.
  3. Cover and refrigerate for ½ hour to allow flavors to meld. Serve chilled.
