Turkey Sloppy Joes

Sloppy Joes are a quick dinner that everyone in my family enjoys -- I love it when my kids say "Oh, yay!" when I tell them it's Sloppy Joes for dinner. They're filling and perfect for a busy evening.

Ingredients

1 small onion, diced
1 1/4 pound ground turkey (85% lean is best)
1/2 cup water
3/4 cup ketchup
1 tbsp brown sugar
1/4 tsp to 1/2 tsp cayenne pepper (to taste)
1/2 tsp Worcestershire sauce
1/2 tsp unsweetened cocoa powder
Hamburger or sandwich rolls

Directions

  1. Add onion to a non-stick skillet and saute until onion is tender and starting to brown, 3-5 minutes.
  2. Add ground turkey to onions and saute, breaking up into small pieces, for 1-2 minutes.
  3. Add 1/2 cup water, ketchup, brown sugar, cayenne pepper, Worcestershire sauce and cocoa powder and continue cooking, stirring and breaking up meat, until turkey is completely cooked and liquid is greatly reduced, about 5-10 minutes. Lower burner temperature as liquid reduces to prevent burning.
  4. Let meat simmer until liquid is almost all gone and any remaining sauce is very thick.
  5. Toast hamburger rolls, pile on a serving of Sloppy Joes, and serve.
We like to serve Sloppy Joes with sweet potato fries and salad.
