Ingredients:
8 slices Texas Toast bread (very thick slices). If Texas Toast bread is not available, use thickly-sliced French bread
2 tablespoons butter, melted
4 eggs
1/3 cup sugar
1/2 tsp cinnamon
2/3 cup milk
3/4 tsp vanilla
Directions:
- Preheat oven to 350 degrees. Line a cookie sheet with a silicone mat (such as Silpat) or with parchment paper for best results. If neither of these is available, spray with cooking spray.
- Cut each piece of Texas toast bread into 3 strips. If your kids don't care for crusts, cut the crusts off before cutting into thirds.
- Mix melted butter, eggs, sugar, cinnamon, milk and vanilla together in a shallow bowl, beating well.
- Dip bread strips in egg mixture quickly but thoroughly, ensuring that all sides are well-moistened. Don't let the bread stay in the egg too long though or it will be too soggy. Lay each dipped bread strip on the prepared pan at least an inch apart.
- Bake sticks in oven for 12 minutes, remove cookie sheet and flip sticks over with a spatula, then return sticks to oven and bake for 13 more minutes. Sticks should be golden-brown and fairly crispy.
- Serve with syrup or jelly.
- Leftover French toast sticks can be frozen in a freezer bag. Reheat by microwaving 3 sticks on a microwave-safe plate for 45 seconds to a minute.

Note -- the fat grams in these can easily be reduced by eliminating the melted butter without too much change in flavor!
