Easy & Healthy Homemade French Toast Sticks

We're totally in a breakfast rut at my house, so I've been promoting other ideas to my kids -- oatmeal, French toast, frittatas -- to no avail. BUT... get them to try these things at a friend's house, and all of a sudden they're begging for them!  My daughter tried frozen French toast sticks at a sleepover last week and requested that I get some at the grocery store.  They certainly sounded easy and yummy but I wasn't happy when I read the nutritional info -- 16 grams of fat in 1 serving of 5 sticks! After experimenting with some recipes, I made home-made French toast sticks that are delicious, nutritionally sound, and very easy to heat up on a busy morning. Thumbs up from the kids too!

Ingredients:
8 slices Texas Toast bread (very thick slices). If Texas Toast bread is not available, use thickly-sliced French bread
2 tablespoons butter, melted
4 eggs
1/3 cup sugar
1/2 tsp cinnamon
2/3 cup milk
3/4 tsp vanilla

Directions:
  1. Preheat oven to 350 degrees.  Line a cookie sheet with a silicone mat (such as Silpat) or with parchment paper for best results. If neither of these is available, spray with cooking spray.
  2. Cut each piece of Texas toast bread into 3 strips.  If your kids don't care for crusts, cut the crusts off before cutting into thirds.
  3. Mix melted butter, eggs, sugar, cinnamon, milk and vanilla together in a shallow bowl, beating well.
  4. Dip bread strips in egg mixture quickly but thoroughly, ensuring that all sides are well-moistened.  Don't let the bread stay in the egg too long though or it will be too soggy. Lay each dipped bread strip on the prepared pan at least an inch apart.
  5. Bake sticks in oven for 12 minutes, remove cookie sheet and flip sticks over with a spatula, then return sticks to oven and bake for 13 more minutes.  Sticks should be golden-brown and fairly crispy.
  6. Serve with syrup or jelly.
  7. Leftover French toast sticks can be frozen in a freezer bag. Reheat by microwaving 3 sticks on a microwave-safe plate for 45 seconds to a minute.




Nutritional info per serving of 4 sticks:
296 calories, 43 g carbs, 12 g sugar, 10 g fat, 9 g protein

Note -- the fat grams in these can easily be reduced by eliminating the melted butter without too much change in flavor!
